Guess what day it is? It’s National Pumpkin Day! And to celebrate, we want to give you a little something. We love pumpkins, especially around this time of year. Instead of showing you artsy and awesome designs of pumpkins, we thought we’d give you a delicious recipe of pumpkin soup to warm you up on a typical Fall, crisp day. Although there are many variations on this classic Fall meal, give our favorite recipe a try. All it takes is a few ingredients and steps and you’ll look at pumpkins in a whole new way!

 

What you’ll need:

  • 1 medium onion, grated on box grater
  • 2 tablespoons of olive oil
  • 1 (29 oz.) can of pure pumpkin
  • 2 (14.5 oz.) of canned chicken broth
  • ½ cup of heavy cream
  • 2 teaspoons of pumpkin pie spice
  • ¾ teaspoon salt (a pinch!)

 

What you’ll have to do:

  • Heat olive oil in a saucepan over medium-high heat. Add the onion and cook for 3 minutes or until it’s soft.
  • Stir in the pumpkin, chicken broth, cream, pumpkin pie spice and a pinch of salt. Cook, stirring occasionally, for about 3 minutes or until soup simmers.
  • Ladle soup into bowls and top as desired – roasted pumpkin seeds, croutons and bacon crumbles are all delicious choices.

 

And there you have it! This recipe serves 4. You can store any leftovers, for lunch tomorrow, in an airtight container in the refrigerator, and it’ll last up to 3 days.
